It was also Giuseppe who, unwittingly, created the largest outdoor swimming pool in central Venice. A mix-up over measurements saw the hotelier planning in feet while the architect worked in metres. This happy mistake is just one of the aspects that makes the Cipriani so extraordinary.

The Michelin-starred restaurant, where art-inspired cuisine is created with organic produce from the hotel's vegetable gardens. The fabled Cip's Club, suspended over the water facing St Mark's and one of the city's hottest tables. The Gabbiano Bar, where regular guest George Clooney's cocktail is a perennial favorite. Reach Sant’Erasmo Island, the green heart of Venice, for a bike tour and visit a celebrated apiary, Il Miele del Doge. A local family manages the beehives that produce 100% organic barena honey – barene are salt marshes, tiny strips of land that disappear at high tide. The bees feed on the limonium, or sea lavender, flowers that grow here, to produce a sweet, balsamic honey with a slightly salty tang. The tour culminates in a visit to owner Mara’s home for a delicious tasting.
Alternatively, guests can cycle through Lio Piccolo, a cluster of islets separated by tiny canals in the Venetian Lagoon, and pedal along a narrow road bordered on both sides by barene. A visit to the local villages of Saccagnana and Pra follows to meet some of the 30 inhabitants of this pristine, nature-rich wilderness. At the end of the day, a little aperitivo right by the water, before gliding into the sunset and back to the hotel. These tours can be enjoyed aboard an electric boat.
